Ingredients

2 racks of lamb, Frenched if possible

3 tablespoons olive oil

2 tablespoons Dijon mustard

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

4 cloves garlic, minced

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

2 tablespoons butter

1/2 cup dry white wine

1 cup beef broth

2 tablespoons cornstarch

Instructions

1. Preheat oven to 375 degrees F. Grease a roasting pan with oil and set aside.

2. In a small bowl, combine the olive oil, mustard, rosemary, thyme, garlic, salt, and pepper.

3. Rub the mixture all over the racks of lamb and place them in the prepared roasting pan.

4. Place the roasting pan in the preheated oven and bake for 30 minutes.

5. In a small saucepan, melt the butter over medium-high heat. Add the wine and beef broth and bring to a simmer.

6. Reduce the heat to low and simmer for 10 minutes.

7. In a small bowl, mix together the cornstarch and 2 tablespoons of cold water.

8. Add the cornstarch mixture to the saucepan and stir until thickened.

9. Baste the racks of lamb with the sauce and roast for an additional 10 minutes, or until the internal temperature of the lamb reaches 140 degrees F.

10. Remove from the oven and let the racks of lamb rest for 10 minutes before slicing.

If you are unable to find Frenched racks of lamb, you can use 2 racks of lamb with the fat and bones still attached. You can also use a different type of mustard or herbs if desired.
