Ingredients

1 pound ground lamb
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes
1 (4 ounce) can diced green chiles
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 cup chicken broth
1/4 cup fresh cilantro, chopped

Instructions

1. In a large skillet over medium heat, cook the ground lamb until browned, about 5 minutes. Add the onion, garlic, and bell pepper and cook until the vegetables are softened, about 5 minutes. Drain the fat and transfer the mixture to a slow cooker.

2. Add the beans, tomatoes, green chiles, chili powder, cumin, oregano, salt, black pepper, and cayenne pepper to the slow cooker. Pour the chicken broth over the top of the mixture and stir to combine.

3. Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. Stir in the cilantro and serve.
