Ingredients

- 4 lamb shanks

- 2 tablespoons olive oil

- 8 cups beef broth

- 2 tablespoons tomato paste

Instructions

1. Heat the olive oil in the pressure cooker over medium-high heat. Add the lamb shanks and cook for about 5 minutes, until lightly browned. Remove the shanks from the pressure cooker and set aside.

2. Add the onion, garlic, carrots, and celery to the pressure cooker and cook for about 5 minutes, until the vegetables are softened. Add the thyme, bay leaves, beef broth, tomato paste, Worcestershire sauce, and salt and pepper to taste. Stir to combine.

3. Return the lamb shanks to the pressure cooker and bring the mixture to a boil. Lock the lid onto the pressure cooker and set the pressure to high. Cook for 25 minutes.

4. Once the cooking time has elapsed, turn off the heat and use the natural release method to release the pressure. Carefully remove the lid and remove the lamb shanks from the pressure cooker. Shred the lamb shanks and return them to the soup.

5. Add the fresh parsley to the soup and stir to combine. Taste and adjust the seasonings as needed. Serve the soup hot.
