Ingredients

1 cup gram flour, 1/2 cup sour yogurt, 1 tablespoon oil, 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 2 cloves garlic, 1 green chilli, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chilli powder, 1 teaspoon sugar, 1/2 teaspoon asafoetida, 2 tablespoons chopped coriander leaves, 1/2 teaspoon salt.

Instructions

1. In a bowl, mix together the gram flour and yogurt until it forms a smooth paste.
2. Heat the oil in a pressure cooker over medium heat. Add the mustard seeds and cumin seeds and let them sizzle for a few seconds.
3. Add the garlic and green chilli and fry for a few seconds.
4. Add the turmeric powder, red chilli powder, sugar, asafoetida, coriander leaves and salt. Stir to mix and fry for a few seconds.
5. Add the gram flour and yogurt mixture and stir to combine.
6. Close the lid of the pressure cooker and cook on high heat for 2 whistles.
7. Turn off the heat and let the pressure release naturally.
8. Open the lid of the pressure cooker and stir to combine.
9. Grease a plate or tray with some oil.
10. Spread the Khandvi mixture evenly on the plate and let it cool for 10 minutes.
11. Cut the Khandvi into strips and serve with chutney.
