Ingredients

  • 2 cups of long grain white rice
  • 1 can (14.5 ounces) diced tomatoes, with juices

  • 1 jalapeño pepper, seeded and diced
  • 2 cloves of garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 3 tablespoons chopped fresh cilantro

Instructions

1. Begin by preparing the ingredients. Rinse the rice in a fine mesh strainer and set aside. Drain the diced tomatoes, discarding the juice. Dice the onion, jalapeño, and garlic. Measure out the vegetable broth and olive oil.

2. Place the rice, diced tomatoes, onion, jalapeño, garlic, vegetable broth, olive oil, cumin, chili powder, oregano, salt and pepper in the rice cooker bowl. Stir to combine.

3. Secure the lid on the rice cooker and turn it on. Allow the rice to cook until it is done, according to your rice cooker’s instructions.

4. Once the rice is cooked, fluff it with a fork and stir in the chopped cilantro. Serve warm with your favorite Mexican food.
