Ingredients

For the lamb shanks:

• Salt and pepper to taste

Instructions

To make the lamb shanks:

1. Heat the olive oil in a large, heavy-bottomed pot over medium-high heat. Add the garlic and onion, and sauté until the onion is softened, about 5 minutes.
2. Add the lamb shanks to the pot, and brown on all sides, about 8 minutes.
3. Pour in the red wine, and add the tomato paste, thyme, rosemary, bay leaves, and salt and pepper. Bring to a boil, reduce heat to low, and simmer, covered, for 1 hour.
4. Uncover the pot, increase the heat to medium, and cook for an additional 30 minutes.

To make the mustard mash:

1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15 minutes.
2. Drain the potatoes, and mash with the butter, cream, mustard, salt, and pepper.

To serve:
