Instructions

To make the filling: Preheat the oven to 350 degrees. In a medium bowl, whisk together the eggs, sugar, flour, and salt until well combined. Whisk in the lemon juice, melted butter, and lemon zest. Pour the mixture into the prepared graham cracker crust.

To make the meringue: In a large bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, a little at a time, and continue to beat until stiff peaks form. Spread the meringue over the top of the filling, making sure to cover all of the edges. Bake the pie for 20-25 minutes, or until the meringue is golden brown. Let the pie cool completely before serving.
