Ingredients
- 2 cups cooked white rice
- 1 teaspoon canola oil
- 1 teaspoon mustard seeds

- 1 teaspoon urad dal (black lentils)
- 2 dried red chilies, broken into pieces
- 10-12 curry leaves
- 1 teaspoon turmeric powder
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup freshly chopped coriander leaves
- Salt, to taste
Instructions
1. Heat the oil in a large saucepan over medium heat. Once the oil is hot, add the mustard seeds and wait for them to splutter. Then add the chana dal, cumin seeds, urad dal, and dried red chilies. Fry for about 30 seconds until the dals and chilies turn golden brown.
2. Add the curry leaves and fry for another 30 seconds. Then add the turmeric powder and stir to combine. Add the cooked white rice and stir to combine. Add the lemon juice and stir to combine. Simmer for 2-3 minutes.
3. Add the freshly chopped coriander leaves and stir to combine. Taste and adjust the seasoning, if necessary. Serve hot with your favorite accompaniments.
