Ingredients
For this recipe, you’ll need:
- 2 tablespoons of oil
- 2 lamb shanks (approximately 1.5 pounds)
- 1 onion, diced
- 2 cloves of garlic, minced

- 1 teaspoon of turmeric
- 1 teaspoon of ground ginger
- 1 can of diced tomatoes
- 1 can of coconut milk

Instructions
To make this delicious curry, start by heating the oil in a large skillet over medium-high heat. Once the oil is hot, add the lamb shanks and brown them on both sides. This should take about 5 minutes per side. Once the lamb shanks are browned, transfer them to the slow cooker.
Next, add the diced onion to the skillet and cook for about 5 minutes, or until the onion is softened and translucent. Then, add the garlic, ground coriander, cumin, turmeric, and ginger. Cook for another minute, stirring frequently, until the spices are fragrant. Finally, add the diced tomatoes, coconut milk, salt, and pepper to the skillet.
