Description

Lamb neck chops are a flavorful, budget-friendly cut of lamb that you can easily make in your pressure cooker. This type of lamb chop is cut from the neck of the lamb and is considered a tougher cut of meat. But, when cooked in a pressure cooker, the meat becomes tender and succulent. This dish is a great way to enjoy a classic lamb dish without breaking the bank. Serve the chops with a side of mashed potatoes and steamed green beans for a delicious and nutritious dinner.

The pressure cooker is the perfect tool to use when preparing lamb neck chops. The high heat and pressurized steam seal in the natural juices, resulting in tender and juicy meat. Plus, the pressure cooker helps to reduce the cooking time, so you can have an amazing dinner on the table in no time.

Ingredients

2-3 tbsp olive oil

4 lamb neck chops

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

1 cup beef broth

2 sprigs fresh rosemary

2 sprigs fresh thyme

1 bay leaf

Salt and pepper to taste

Instructions

1. Heat the olive oil in the pressure cooker over medium-high heat. Once the oil is hot, add the lamb neck chops and sear for 2-3 minutes per side, or until browned. Remove the chops from the pot and set aside.

2. Add the onion, garlic, carrots, and celery to the pot and cook for 2-3 minutes, or until the vegetables begin to soften. Pour in the beef broth and add the herbs. Return the lamb chops to the pot and season with salt and pepper. Stir to combine.

3. Lock the lid into place and bring the pot to high pressure. Once the pressure is reached, reduce the heat to maintain the pressure and cook for 25 minutes.

4. Remove the pot from the heat and let the pressure release naturally for 10 minutes. After 10 minutes, release any remaining pressure and unlock the lid. Remove the chops from the pot and serve.
