Instructions

Add the ice water, a tablespoon at a time, and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 375°F. On a lightly floured surface, roll the dough out into a 12-inch circle. Transfer the dough to a 9-inch pie plate. Trim the excess dough and crimp the edges.

To make the filling: In a large bowl, combine the rhubarb, flour, sugar, ginger, and cinnamon. Pour the mixture into the prepared crust. Drizzle the melted butter over the top. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly. Let the pie cool completely before serving.

Notes

This recipe can easily be doubled and baked in a 9x13-inch pan. You can also use frozen rhubarb in place of fresh. If you do use frozen, be sure to thaw and drain it before adding it to the filling.
