This Joy of Cooking Fruit Cake recipe is a delicious and easy to make version of the classic fruit cake.

Ingredients

For the cake:
1 cup (200g) dark brown sugar
1 cup (125g) sifted all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon salt
1 cup (150g) chopped dates
1 cup (150g) chopped raisins
1 cup (150g) chopped walnuts
¼ cup (60ml) dark rum or brandy
1 teaspoon vanilla extract
3 large eggs, lightly beaten
½ cup (125ml) vegetable oil

For the topping:
2 tablespoons melted butter
2 tablespoons dark brown sugar
2 tablespoons chopped walnuts

Instructions

Preheat the oven to 350°F (180°C). Grease and flour a 9x5-inch (23x13cm) loaf pan.
In a large bowl, mix together the sugar, flour, baking powder, spices, and salt. Stir in the dates, raisins, and walnuts.
In a separate bowl, whisk together the rum or brandy, vanilla extract, eggs, and oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
Pour the batter into the prepared pan and spread evenly. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
While the cake is baking, prepare the topping. In a small bowl, mix together the melted butter, brown sugar, and walnuts.
Remove the cake from the oven and immediately spread the topping over the top. Return the cake to the oven and bake for an additional 15 minutes.
