Ingredients

• 2 cups dried white beans, soaked overnight and rinsed

• 2 tablespoons bacon fat, lard or butter

• 1 large onion, diced

• 2 cloves garlic, minced

• 1 teaspoon dried thyme

• 2 tablespoons tomato paste

• 2 bay leaves

• 2 cups chicken or vegetable broth or water

• 2 teaspoons Worcestershire sauce

• 2 tablespoons cider vinegar

• 1 teaspoon sugar

• 1 teaspoon salt

• 1/2 teaspoon freshly ground black pepper

• 1/2 cup diced bell pepper

• 1/2 cup diced celery

• 1/2 cup diced carrots

• 1/2 cup diced ham

• 1/2 cup chopped fresh parsley

• 1/4 cup chopped fresh basil

• 2 tablespoons olive oil

• 1/2 cup grated Parmesan cheese

Instructions

1. Heat the bacon fat, lard or butter in a large skillet over medium-high heat. Add the onion, garlic, thyme and tomato paste and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

2. Stir in the beans, bay leaves, broth or water, Worcestershire sauce, vinegar, sugar, salt and pepper. Simmer for 10 minutes, stirring occasionally.

3. Transfer the mixture to the slow cooker. Add the bell pepper, celery, carrots, ham, parsley, basil and olive oil. Stir to combine.

4. Cover and cook on low for 8-10 hours, until the beans are tender.

5. Just before serving, stir in the Parmesan cheese.

6. Serve with a side of crusty bread and a salad. Enjoy!

Notes

• You can use any variety of white beans for this recipe. Great Northern beans, navy beans, or cannellini beans all work well.

• If you are using canned beans, you can skip the overnight soaking and simmering step. Just drain and rinse the beans before adding them to the slow cooker.

• You can adjust the seasonings to your taste. Feel free to add more garlic, herbs, or spices.

• If the beans are not tender after 8 hours, continue cooking until they are.

• If you prefer a thicker sauce, you can mash some of the beans with a potato masher before serving.
