Ingredients

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup butter, cold and cut into cubes
  • 5-7 tablespoons cold water
For the filling:
  • 6-8 large apples, peeled and thinly sliced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, melted

Instructions

Making the crust

To make the crust, combine the flour and salt in a large bowl. Add the butter, and use a pastry blender to incorporate the butter into the flour until the mixture resembles coarse crumbs. Slowly add the cold water, one tablespoon at a time, and mix until the mixture forms a dough. Divide the dough in half, shape into two disks, and wrap in plastic wrap. Refrigerate the dough for at least one hour before using.

Making the filling

To make the filling, combine the apples, flour, spices, sugar, and lemon juice in a large bowl. Mix the ingredients until everything is evenly distributed. Set the filling aside while you prepare the crust.

Assembling the pie

Preheat the oven to 375°F. Remove one of the disks of dough from the refrigerator. On a lightly floured surface, roll out the dough until it is about 1/8 inch thick. Place the dough in a 9-inch pie plate, and trim the edges. Fill the pie plate with the apple filling, and pour the melted butter over the top. Roll out the second disk of dough, and place it over the top of the pie. Trim the edges, and crimp the edges of the crust. Cut a few steam vents in the top crust. Place the pie on a baking sheet, and bake for 45-60 minutes, or until the crust is golden brown and the filling is bubbling.

Notes

This recipe makes one 9-inch apple pie. If you want to make two pies, double the recipe. For a lattice crust, roll out the dough into two rectangles, and cut the dough into long strips. Layer the strips of dough over the top of the filling, and trim the edges. You can also add other spices to the filling, such as ground ginger or cardamom.
