Ingredients

  • 2-3 tablespoons of olive oil
  • 2-3 lamb shanks
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of sea salt
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1 teaspoon of ground coriander
  • 2 cups of beef stock
  • 1/4 cup of tomato paste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the lamb shanks and brown them for about 5 minutes on each side.

2. Transfer the lamb shanks to the slow cooker. Add the onion, garlic, salt, pepper, oregano, thyme, cumin, paprika and coriander to the slow cooker and stir to combine.

3. Pour in the beef stock and tomato paste and stir to combine.

4. Cover the slow cooker and cook on low heat for 8-10 hours, or on high heat for 4-5 hours.

5. Once the lamb shanks are cooked through, remove them from the slow cooker and let them rest for 5 minutes before serving.

Notes

If you don’t have a slow cooker, you can also make this recipe in the oven. Preheat the oven to 350℉, place the lamb shanks in a roasting pan and pour the beef stock and tomato paste mixture over the shanks. Cover the pan with aluminum foil and bake for 2-3 hours, or until the lamb is tender.
