This delicious slow cooker Japanese beef curry recipe is a savory and flavorful curry that is sure to please the whole family. It is made with tender chunks of beef, potatoes, and a variety of vegetables cooked in a flavorful and aromatic Japanese-style curry sauce. Ingredients

2 pounds of beef chuck, cut into 1-inch cubes
2 medium potatoes, peeled and cubed
1 onion, diced
2 carrots, peeled and diced
1 bell pepper, diced
2 cloves of garlic, minced
1 tablespoon of fresh ginger, minced
1/4 cup of sake
1/2 cup of soy sauce
1/2 cup of mirin
1/2 cup of Japanese curry roux or curry powder
1/4 cup of sugar
1/4 cup of honey
2 cups of water
Salt and pepper, to taste

Instructions

1. Place the beef cubes into the bottom of a slow cooker. Add the potatoes, onion, carrots, bell pepper, garlic, and ginger. Pour the sake, soy sauce, mirin, curry roux, sugar, honey, and water over the top of the ingredients in the slow cooker.

2. Season with salt and pepper, to taste. Cover the slow cooker with the lid and set the timer for 4-6 hours on low heat.

3. Once the timer goes off, check the consistency of the curry. If the sauce is too thin, remove the lid and allow the curry to cook for an additional 30 minutes.

4. Serve the curry over steamed white or brown rice. Enjoy!

Notes

This recipe can also be made in a large pot or pan on the stovetop. Simply follow the instructions above, but cook the curry on medium-low heat for 1-2 hours, stirring occasionally to prevent the ingredients from burning.
