Description

This Mexican pork stew recipe is slow cooker friendly and perfect for a comforting weeknight meal. It’s packed with flavor from the combination of tomato sauce, chilies, and seasonings, and is delicious served over Mexican-style rice or beans. You can adjust the heat level to your liking by adding more or fewer chilies. Feel free to also add in some extra veggies, like bell peppers or zucchini, for an even heartier stew.

Ingredients

- 2 pounds boneless pork shoulder, cut into 1-inch cubes

- 1 onion, diced

- 2 cloves garlic, minced

- 1 jalapeno, seeded and diced

- 2 tablespoons olive oil

- 1 (15-ounce) can diced tomatoes

- 1 (14-ounce) can tomato sauce

- 1/4 cup chicken broth

- 1 (4-ounce) can diced green chilies

- 1 tablespoon chili powder

- 2 teaspoons ground cumin

- 1 teaspoon dried oregano

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1/4 teaspoon cayenne pepper

- 1 bay leaf

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the pork cubes and cook until lightly browned, about 5 minutes. Transfer the pork to a slow cooker.

2. Add the onion, garlic, and jalapeno to the skillet and cook until the vegetables are softened, about 5 minutes. Add the diced tomatoes, tomato sauce, chicken broth, green chilies, chili powder, cumin, oregano, salt, black pepper, and cayenne pepper. Bring the mixture to a boil and then reduce the heat to low. Simmer the mixture for 5 minutes.

3. Pour the mixture over the pork in the slow cooker. Add the bay leaf and stir to combine. Cover and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.
4. Before serving, remove the bay leaf and adjust the seasoning if needed. Serve the stew over Mexican-style rice or beans.

Notes

This stew can also be cooked in a Dutch oven on the stovetop. Just bring the mixture to a boil, reduce the heat to low, and simmer for 1 1/2 to 2 hours, or until the pork is tender. You may need to add more liquid (water or chicken broth).
