Ingredients
2 tablespoons vegetable oil
2 pounds boneless lamb, cut into 1-inch cubes
1 large onion, finely chopped
3 cloves garlic, minced

2 teaspoons ground coriander
1 teaspoon ground cardamom
1 teaspoon ground turmeric
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon garam masala
1 (14.5 ounce) can diced tomatoes
1/2 cup chicken stock
1/4 cup plain yogurt
Salt and freshly ground black pepper, to taste
Instructions
Heat the oil in a large skillet over medium-high heat. Add the lamb and cook until browned, about 5 minutes. Transfer to a slow cooker. Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic, ginger, cumin, coriander, cardamom, turmeric, paprika, cayenne pepper, and garam masala. Cook, stirring, until fragrant, about 1 minute. Transfer the mixture to the slow cooker. Add the tomatoes, chicken stock, yogurt, and season with salt and pepper to taste. Cover and cook on low until the lamb is tender, about 6 hours.

You can also use boneless beef instead of lamb if you prefer. If you want a spicier dish, add more cayenne pepper. You can also add a tablespoon of tomato paste to the sauce for a thicker, richer consistency.
