Ingredients

2 cups plain yogurt

2 green chilies, chopped
1 teaspoon ginger, grated
2 tablespoons fresh coriander, chopped

Instructions

1. In a large bowl, mix together the chickpea flour and yogurt until you get a thick batter. 2. Heat the vegetable oil in a large pan over medium heat. Add the salt, red chili powder, cumin powder, sugar, mustard seeds, green chilies, and ginger. Saute for a few minutes. 3. Add the batter to the pan and cook, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan. 4. Grease a large, flat tray with oil. Pour the mixture onto the tray and spread it out evenly. 5. Place the tray in the preheated oven and bake at 350°F for 20 minutes. 6. Remove the tray from the oven and let cool. Cut the khandvi into small pieces and serve warm or cold.
