Jamaican Beef Stew Recipe Slow Cooker

Ingredients
2 pounds of beef stew meat, cut into 1-inch cubes
1 large onion, chopped
4 large carrots, cut into 1-inch pieces
4 large potatoes, cut into 1-inch cubes
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon allspice
1 scotch bonnet pepper, seeded and finely chopped
1/4 cup tomato paste
3 cups beef broth
Salt and pepper to taste
1/4 cup chopped fresh parsley
Instructions
1. Begin by seasoning the beef cubes with salt and pepper. Add the beef to the slow cooker, and top with the chopped onions, carrots, potatoes, garlic, thyme, allspice and scotch bonnet pepper. Top with the tomato paste and pour the beef broth over the top.
2. Cover the slow cooker and cook on low for 8-10 hours, or until the beef is tender. If desired, you can add a little more beef broth if the stew seems too thick.
3. Once the beef is cooked, remove from the slow cooker and set aside. Use a slotted spoon to remove the vegetables from the slow cooker, and place in a bowl. Add the reserved beef back to the slow cooker and stir to combine. Taste the stew and adjust the seasonings, if needed.
4. Serve the stew over cooked rice or with your favorite bread. Top with the chopped parsley and enjoy!

Notes
This stew can also be made on the stovetop. To do so, follow the instructions above, but instead of adding the ingredients to the slow cooker, add them to a large pot. Bring to a boil, then reduce the heat and simmer for 1-2 hours, or until the beef is tender.
