Slow Cooker Jerk Pork Recipe

Ingredients
For the marinade:
- 1/4 cup olive oil
- 1/4 cup lime juice

- 1 teaspoon ground black pepper
- 1/2 teaspoon ground cinnamon

- 3-4 pounds pork shoulder, cut into cubes
- 2 tablespoons brown sugar
- 1 teaspoon salt
Instructions
1. In a large bowl, mix together the olive oil, lime juice, garlic, ginger, allspice, thyme, nutmeg, black pepper, cinnamon, cayenne pepper, cloves, and cardamom. 2. Add the pork cubes to the marinade and stir to coat. Cover and let marinate for at least 30 minutes, or up to overnight. 3. When you’re ready to cook, add the pork and marinade to a slow cooker. Stir in the brown sugar and salt. 4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is very tender. 5. Serve with rice and beans and your favorite Caribbean sides.
