Instructions

Begin by heating a large skillet over medium-high heat. Once hot, add a tablespoon of olive oil and then the cubed lamb. Cook the lamb until it is nicely browned on all sides, about 8-10 minutes. Once the lamb is cooked, transfer it to the slow cooker.

Next, add the onion, bell pepper, and garlic to the skillet and cook for about 2 minutes, stirring occasionally. Add the tomato paste, Worcestershire sauce, oregano, thyme, bay leaves, salt and pepper, and stir until combined. Then, add the red wine to the skillet and stir. Bring to a boil, then reduce the heat to low and simmer for about 10 minutes.

Pour the contents of the skillet over the lamb in the slow cooker and stir. Cover and cook on low for 6-8 hours, or until the lamb is tender and cooked through. Serve over cooked rice or mashed potatoes, if desired.
