Taco Soup

Description

Ingredients


-1 pound ground beef
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon chili powder
-1 teaspoon cumin
-1 teaspoon oregano
-1/2 teaspoon smoked paprika
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 (15-ounce) can black beans, drained and rinsed
-1 (15-ounce) can pinto beans, drained and rinsed
-1 (14.5-ounce) can diced tomatoes, undrained
-1 (14.5-ounce) can tomato sauce
-2 cups chicken broth
-1 (4-ounce) can green chilies, diced
-1/2 cup frozen corn
-1/4 cup chopped fresh cilantro
-1/4 cup sour cream

Instructions


1. Set the pressure cooker to the “brown” setting. Add the ground beef, onion, garlic, chili powder, cumin, oregano, smoked paprika, salt, and pepper. Cook until the beef is browned and the vegetables are softened, about 5 minutes.
2. Drain off any excess fat. Add the black beans, pinto beans, diced tomatoes, tomato sauce, chicken broth, and green chilies. Stir to combine.
3. Secure the lid and set the pressure cooker to “high” pressure for 10 minutes.
4. When the cooking time is finished, carefully release the pressure.
5. Stir in the frozen corn and cilantro. Taste and adjust seasoning, if needed.
6. Serve the soup topped with a dollop of sour cream.

Notes


- This recipe can easily be doubled for larger families.
- If you don't have a pressure cooker, you can also make this in a slow cooker. Just brown the beef and vegetables in a skillet, then add all the ingredients to the slow cooker and cook on low for 6-8 hours.
- If you like your soup a bit spicier, you can add more chili powder, or even a pinch of cayenne pepper.
