Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons freshly chopped cilantro
  • 2 tablespoons freshly chopped parsley

Instructions

In a medium bowl, combine the cubed chicken with the garlic powder, cumin, paprika, coriander, cardamom, turmeric, black pepper, and cinnamon. Toss to combine and set aside.

In a small bowl, mix together the heavy cream, chicken stock, tomato paste, butter, garlic, cumin, paprika, coriander, cardamom, turmeric, black pepper, cinnamon, and red pepper flakes.

Spray the inside of a slow cooker with cooking spray. Add the chicken and pour the sauce over the top. Stir to combine.

Cover and cook on low for 6-8 hours or on high for 4-5 hours.

When the chicken is cooked through, stir in the cilantro and parsley. Serve with cauliflower rice or a fresh salad.
