Ingredients

For the crust:

- 2 ½ cups all-purpose flour

- 1 teaspoon salt

- 1 teaspoon sugar

- 1 cup (2 sticks) cold butter, cut into small pieces

- 5-7 tablespoons cold water

For the filling:

- 5 cups peeled, pitted, and sliced peaches

- ½ cup sugar

- 2 tablespoons all-purpose flour

- 2 tablespoons fresh lemon juice

- 2 tablespoons butter, melted

- ¼ teaspoon ground cinnamon

- Pinch of ground nutmeg

Instructions

1. Preheat oven to 375°F. Grease a 9-inch pie plate with butter or cooking spray.

2. In a medium bowl, combine the flour, salt, and sugar. Cut in the butter with a pastry blender or two forks until the mixture resembles coarse meal.

3. Gradually add the cold water, stirring with a fork until the dough holds together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least one hour.

4. Remove the dough from the refrigerator and roll out on a lightly floured surface to fit the pie plate. Place the dough in the pie plate, trim the edges, and crimp with a fork.

5. In a large bowl, combine the peaches, sugar, flour, lemon juice, butter, cinnamon, and nutmeg. Mix until combined.

6. Place the peach mixture in the prepared pie crust and bake for 25-30 minutes, or until the crust is golden and the filling is bubbling.

7. Let cool for at least one hour before serving.

Equipment

- 9-inch pie plate

- Pastry blender or two forks

- Plastic wrap

- Rolling pin

- Large bowl

Notes

- You can use frozen peaches instead of fresh, but make sure they are thawed and drained first.

- If you don’t have a pastry blender, you can use two forks to cut in the butter.

- You can use store-bought pie crust instead of making your own, but homemade crust is always best.
