Ingredients
2 cups granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
2 egg whites

Instructions
1. In a medium saucepan, combine the sugar, corn syrup, salt and water. Stir until all ingredients are combined. Heat the mixture over medium heat until it reaches a temperature of about 250°F (120°C).
2. While the mixture is heating, beat the egg whites in a medium bowl with an electric mixer until they form stiff peaks. Once the mixture has reached the desired temperature, slowly pour it into the egg whites while continuing to beat with the electric mixer.
3. Add the vanilla extract and beat until the mixture is light and fluffy. Then, fold in the chopped nuts or coconut flakes if desired.
4. Using two spoons, scoop up the mixture and drop it onto a parchment-lined baking sheet. Let the divinity cool completely before serving.
