Ingredients

2 lbs of beef chuck roast
2 tablespoons of jerk seasoning

1 cup of beef broth
1/4 cup of chopped fresh cilantro
1 onion, sliced
2 carrots, peeled and sliced
2 celery stalks, chopped
2 potatoes, peeled and cubed

Instructions

1. In a small bowl, mix together the jerk seasoning, garlic, olive oil, lime juice, sea salt, and black pepper. Rub the mixture all over the beef. 2. Place the beef in the slow cooker and top with the beef broth. 3. Add the onion, carrots, celery, and potatoes to the slow cooker. 4. Cover and cook on low for 8 hours or on high for 4 hours. 5. When the beef is cooked, remove from the slow cooker and shred with two forks. 6. Return the beef to the slow cooker and stir in the cilantro. 7. Serve over rice or with your favorite sides.
