Ingredients

For the dough:

  • 1 cup warm milk
  • 2 tablespoons active dry yeast
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 1/3 cup butter, melted
  • 2 eggs
  • 4 1/2 cups all-purpose flour

For the filling:

  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 3 tablespoons ground cinnamon
  • 1 cup raisins (optional)
  • 1 cup chopped walnuts (optional)

For the glaze:

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups confectioners' sugar
  • 1 tablespoon milk

Instructions

1. In a large bowl, combine the warm milk, yeast, sugar, salt, melted butter, and eggs. Mix until everything is thoroughly combined.

2. Gradually add the flour to the mixture while stirring until a soft dough forms. Knead the dough on a lightly floured surface for about 5 minutes.

3. Place the dough in a greased bowl and cover with a damp cloth. Let the dough rise for about 1 hour in a warm place.

4. Meanwhile, in a medium bowl, combine the softened butter, brown sugar, and cinnamon. Stir until everything is well blended.

5. On a lightly floured surface, roll the dough into a 16x21 inch rectangle. Spread the filling over the dough and sprinkle with raisins and walnuts if desired.

6. Starting with the long side, roll the dough up tightly. Cut the dough into 12 rolls and place them into a greased 9x13 inch baking pan.

7. Cover the rolls with a damp cloth and let them rise for another 30 minutes. Preheat the oven to 350 degrees F (175 degrees C).

8. Bake the rolls for 25 to 30 minutes, or until golden brown.

9. To make the glaze, combine the cream cheese, butter, and vanilla in a medium bowl. Gradually add the confectioners' sugar and milk and mix until smooth. Spread the glaze over the warm rolls and serve.

Equipment

  • Large bowl
  • Mixing spoon
  • Floured surface
  • Greased 9x13 inch baking pan

Notes

It's important to use warm milk for this recipe. If the milk is too hot, it will kill the yeast. You can also use canned biscuit dough for an easier version of this recipe.

If you want to make the rolls ahead of time, you can prepare the dough and fillings and store them in the refrigerator overnight. The next day, roll out the dough, fill, and bake as directed.
