Instructions



To begin, heat a large skillet over medium heat and add the vegetable oil. When the oil is hot, add the onion, carrot, mushrooms, and garlic and sauté until the vegetables are softened and lightly browned. Add the cooked white rice and stir to combine. In a small bowl, mix together the soy sauce, mirin, sugar, and salt. Pour the mixture over the rice and vegetables and stir until all the ingredients are well combined. Cook for an additional 5 minutes, stirring occasionally. Finally, add the scallions and edamame beans and cook for an additional 2 minutes. Serve the rice hot or at room temperature.

Notes



This recipe can easily be made vegan by omitting the edamame beans and replacing the mirin with rice vinegar.

If you don’t have mirin, you can substitute it with a mixture of 2 tablespoons of sugar and 2 tablespoons of rice vinegar.
