Ingredients

For the Beef Bourguignon:
2 tablespoons olive oil
3 pounds beef chuck roast, cut into 2-inch pieces

1/4 cup all-purpose flour
2 tablespoons butter
2 onions, chopped
2 cloves garlic, minced
1/2 cup red wine
1/2 cup beef broth
1/4 cup tomato paste
2 bay leaves
1 teaspoon fresh thyme leaves
2 carrots, peeled and chopped
2 celery stalks, chopped
1/2 pound mushrooms, sliced
1/4 cup chopped fresh parsley

Instructions

1. Preheat oven to 350°F.

2. Heat olive oil in a large Le Creuset Dutch oven or braiser over medium-high heat. Season the beef with salt and pepper and dust with flour. Add the beef to the pot in batches and cook until browned on all sides, about 5 minutes per batch. Transfer the beef to a plate and set aside.

3. Add the butter to the pot and melt. Add the onions and garlic and cook until softened, about 3 minutes. Add the wine, beef broth, tomato paste, bay leaves, and thyme and bring to a simmer. Return the beef to the pot and stir to combine.

4. Cover the pot with the lid and transfer to the oven. Bake for 1 1/2 hours, stirring occasionally.

5. Add the carrots, celery, mushrooms, and parsley to the pot and stir to combine. Cover and return to the oven. Bake for an additional 30 minutes, or until the beef is fork-tender.

6. Serve the beef bourguignon with mashed potatoes or crusty bread. Enjoy!
