Ingredients
2 cups basmati rice
1 cup sugar
1 teaspoon cardamom powder
2 tablespoons ghee
2 cups water
1/2 cup raisins
1/2 cup chopped almonds (optional)
Instructions
1. Wash the basmati rice several times in cold water until the water runs clear. Soak the rice in water for at least 30 minutes. Drain the water from the soaked rice and set aside.
2. Heat the ghee in the pressure cooker. Add the soaked rice and sauté for 2 minutes. Add the sugar, cardamom powder, and raisins and mix well. Pour in the water and mix again.
3. Close the lid of the pressure cooker and cook for 2-3 whistles. Once the pressure cooker has cooled down naturally, open the lid and fluff up the rice with a fork.
4. Garnish the meethe chawal with chopped almonds and serve warm.
