Ingredients
500g lean beef mince
500g lean pork mince
1 onion, chopped finely
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon smoked paprika
1/4 cup breadcrumbs
Salt and pepper, to taste
1/4 cup ketchup, for glazing
Instructions
1. Place the beef and pork mince in a large bowl. Add the chopped onion, garlic, eggs, Worcestershire sauce, thyme, oregano, basil, paprika, breadcrumbs, salt, and pepper. Using your hands, mix the ingredients together until they are thoroughly combined.
2. Grease the slow cooker with cooking spray. Transfer the mixture to the slow cooker and shape into a loaf. Cover the slow cooker and cook on low for 4-5 hours.
3. After 4-5 hours, remove the lid and brush the top of the meatloaf with ketchup. Cover the slow cooker and cook for a further 30 minutes.
4. Remove the meatloaf from the slow cooker and allow to rest for 10 minutes before slicing. Serve with mashed potatoes and vegetables. Enjoy!
