Ingredients

For this recipe, you will need: 2 tablespoons of butter, 2 onions, finely chopped, 1 garlic clove, finely chopped, 2 tablespoons of plain flour, 1½ litres of vegetable stock, 2 large potatoes, peeled and diced, 2 carrots, peeled and diced, 1 teaspoon of dried thyme, 2 tablespoons of double cream.

Instructions

1. Heat the butter in a large saucepan over a medium heat. Add the onions and garlic, and cook for 5 minutes until softened.
2. Add the flour and stir well to combine. Gradually add the stock, stirring constantly until all of the stock has been added and the mixture is smooth.
3. Add the potatoes, carrots and thyme. Bring to the boil, then reduce the heat and simmer for 15 minutes until the vegetables are tender.
4. Remove the soup from the heat and blend until smooth.
5. Return the soup to the pan and stir in the cream. Season to taste with salt and pepper and serve.

Equipment

You will need a large saucepan, a blender and a wooden spoon for this recipe.

Notes

This soup can be served hot or cold. If you're serving it cold, you may want to add a little extra cream to give it a creamier texture. For a vegan version, use a vegan stock and omit the cream.
