Ingredients
• 4 lamb shanks
• 2 tablespoons olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 2 tablespoons tomato paste
• 1 teaspoon dried oregano
• 1 teaspoon dried thyme
• 1 teaspoon smoked paprika
• 1 teaspoon sea salt
• ¼ teaspoon black pepper
• 1 cup beef broth
• 2 cups diced tomatoes
• 2 tablespoons chopped fresh parsley
• 2 tablespoons chopped fresh basil
Instructions
1. Heat the olive oil in a large skillet over medium-high heat. Add the lamb shanks and sear for about 2 minutes per side, until golden brown. Transfer to the slow cooker.
2. Add the onion and garlic to the skillet and cook until softened, about 5 minutes. Add the tomato paste, oregano, thyme, paprika, salt, and pepper, and cook for another 1-2 minutes, stirring constantly. Add the beef broth, diced tomatoes, parsley, and basil and bring to a simmer. Pour the tomato sauce over the lamb shanks in the slow cooker.
3. Cover and cook on low for 6-8 hours, or until the lamb shanks are tender and cooked through. Serve with mashed potatoes or rice.
