Ingredients

  • 1 cup toor dal
  • 1 large potato, diced
  • 1 carrot, diced

  • 1 drumstick, diced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon sambar powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 1 tablespoon tamarind paste
  • 1/4 teaspoon asafoetida powder
  • 2 tablespoon oil
  • Curry leaves
  • Salt to taste

Instructions

1. First, rinse the toor dal in a colander until the water runs clear. Soak the dal in water for 30 minutes.

2. Heat oil in the pressure cooker and add mustard seeds, cumin seeds, fenugreek seeds, and curry leaves. Let the seeds splutter and add the asafoetida powder.

3. Add the diced vegetables and sauté for a few minutes. Add the soaked toor dal and mix well. Add turmeric powder, sambar powder, red chilli powder, salt, and tamarind paste. Add 4-5 cups of water and mix well. Close the lid and pressure cook for 4-5 whistles.

4. Once the pressure has released, open the lid and mash the dal with a spoon. Simmer the sambar for 5-7 minutes and add more water if needed. Taste and adjust the seasoning. Garnish with coriander leaves and serve hot.

Notes

If you don't have sambar powder, you can use a combination of coriander powder, cumin powder, and red chilli powder. You can also substitute vegetables like beans, okra, or eggplant for the vegetables in this recipe. You can also use tamarind extract instead of tamarind paste.
