Ingredients
1kg lamb shoulder, cut into cubes
2 onions, diced
4 cloves garlic, chopped
1 tablespoon olive oil
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1/2 teaspoon ground cinnamon
2 sweet potatoes, peeled and cubed
1 cup chicken stock
1/4 cup freshly chopped parsley
Salt and pepper to taste
Instructions
1. Preheat your oven to 180°C. Heat the olive oil in a large oven-proof dish over medium heat. Add the lamb cubes and brown all over. Remove from the heat and set aside.
2. Add the onions and garlic to the same dish and cook until soft. Add the tomato paste, cumin, coriander, paprika and cinnamon, and cook for a further minute. Add the sweet potatoes and stir to coat with the mixture.
3. Pour the chicken stock into the dish, season with salt and pepper, and bring to the boil. Reduce the heat and simmer for 10 minutes. Add the lamb cubes back to the dish, cover with a lid and transfer to the oven to cook for 2 hours.
4. After 2 hours, remove the lid and cook for a further 30 minutes, or until the lamb is tender and the sweet potatoes are cooked through. Remove from the oven and sprinkle with the chopped parsley.
