Ingredients
2 pounds of chicken thighs and drumsticks
3 tablespoons of vegetable oil
1 large onion, diced
3 cloves of garlic, minced
1 teaspoon of fresh ginger, grated
2 tablespoons of tomato paste
2 tablespoons of brown sugar
2 tablespoons of Jamaican jerk seasoning
1 teaspoon of ground allspice
1 teaspoon of ground cinnamon
1 teaspoon of ground nutmeg
1 teaspoon of ground black pepper
1 teaspoon of dried thyme
1/2 teaspoon of cayenne pepper
1/2 cup of chicken broth
1/2 cup of coconut milk
Salt to taste
Instructions
1. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown on both sides, about 8 minutes. Remove the chicken from the skillet and set aside.
